My little gift to you on this day is this age-old recipe I’ve been baking Christmas morning for my family since I was 12 years old. I’ve adapted it over the years as my dietary preferences have changed, so this is the latest and greatest version: gluten-free, vegan and refined sugar-free cinnamon pi wheels.
It’s like a healthier version of cinnamon buns, and still taste absolutely delicious. If you are not a vegan, you can always substitute the coconut oil for organic grass-fed butter.
Gluten-Free Vegan Cinnamon Bun Recipe
❄️ 2 cups of gluten-free flour (sifted)
❄️ 4 Tsp of baking powder
❄️ 1/2 tsp of salt
❄️ 1 tsp lemon juice
❄️ 2 tsp coconut sugar
❄️ 1/2 cup of coconut oil (solid)
❄️ 2/3 cup of plant milk
❄️ 3 tbs coconut oil (melted)
❄️ 1/2 cup of coconut sugar
❄️ 1 tsp cinnamon
❄️ 1 cup raisins
Sift dry ingredients into a bowl, plus lemon juice. Cut in the solid coconut oil, making the mixture flakey. Add plant milk all at once, stir and form a ball. Turn lightly onto a lightly floured surface and knead 10-12 times.
Pat it out and then roll it into a long rectangle about 1/2 an inch thick. Brush melted coconut oil over the long dough, sprinkle the remainder of the coconut sugar onto the dough and spread the raisins evening.
Roll the dough from the long edge side making a long tube of dough. Cut into 1 inch long pieces and stack with the swirly side up on a baking tray.
Bake at 450 F (230 C) for 10-12 mins. Let cool slightly and serve ❤️ enjoy!
