Raw Mock Hummus – Healthy & Yummy Alternative for Veggie Dip

Every so often I get a little creative in the kitchen. What’s not so creative is that it usually involves a blender and some veggies. I am definitely no Martha Stewart — and I’ll take healthy over creative any day; however, this weekend I was both :) I whipped this one up while I was inspired by the raw food restaurant I found here in the North.

It is a great, healthy and lower calorie (for those of you who are counting them) alternative to traditional dips used for veggies. The best part is it contains great beauty benefits for your skin and hair, as well as some heart healthy components like garlic.

In a blender I combined:

  • 1.5 – 2 chopped zucchinis
  • 2 tbs of raw tahini
  • 1 tsp of fresh lemon juice
  • 1 large garlic clove
  • Sprinkle of cayenne pepper
  • Pinch of salt & pepper

I scooped it into a bowl and munched away for a good while. It takes minutes to make – and seconds if you have pre-cut veggies in your fridge already :)

Try getting creative and adding different flavors – maybe some onions or a splash of Bragg’s Liquid Aminos. The zucchini is rich in Vitamin A (essential for beautiful skin, hair, nails and healthy eyes), Vitamin C (encourages collagen formation – aka bye bye wrinkles) and potassium (sodium balancing – helps curb water retention). Additionally, zucchini has a high fiber content, which helps keep your digestive tract healthy and balanced. For the low amount of calories in a zucchini, you get a great host of health and beauty benefits in return.
